Vanilla Almond Protein Balls – gluten free, dairy free, vegan friendly

Ingredients: 

  • 1/2 cup Almond Meal
  • 1 cup vanilla vegan protein powder (we use PranaOn Power Plant Protein)
  • 1/2 cup raw almonds
  • 1/2 cup pepitas
  • 1/2 cup coconut
  • 1/2 cup coconut oil
  • 1 tsp almond milk
  • 1/2 cup rice malt syrup (or other sweetener of your choice)
  • 5 medjool dates

Method: 

Please almonds, almond meal, pepitas, coconut, dates, rice malt, coconut oil, vanilla in food processor and mix until combined (should be sticky). Once combined add protein powder and mix again. Roll into little balls and roll in desicated coconut or crushed nuts. Best left to set in the fridge overnight.
