Banana Bread Slice – GF, DF & Vegetarian

Ingredients

  • 1 cup protein powder
  • 3 overripe bananas
  • 1/2 cup maple syrup
  • 1bspoon vanilla
  • 1 tbspoon baking soda
  • 6 medjool dates
  • 1 cup walnuts and pecans each (leave a few aside for decoration)
  • 2 eggs
  • 1/2 cup almond milk
  • 1/2 cup coconut shredded

Method: 

preheat oven to 160degrees and line a loaf with coconut oil and baking paper.

Place eggs, banana, milk, sweetener in a blender and combine. Place the nuts in a food processor and mix until fine. Place in a bowl with the other dry ingredients and mix. One mixed add the wet mixture stir and place in the loaf tin and decorate as you like. Cook for 20 mins but keep checking so it doesn’t burn. Melt some vegan, gf, sugar free chocolate and drizzle on top to serve.
